I know what you’re thinking, GLUTEN FREE? They cant be low(ish) carb and taste good, right? WRONG! These little bad boys have quickly become my new favorite!
Awhile back, I decided to go gluten free for personal health reasons. I’m not completely gluten free because all things in moderation…right? I mean a girls gotta eat a greasy piece of pizza and tacos every once in awhile!
In my quest to live a healthier lifestyle, I ditched the white flour and started experimenting with almond flour. I wish it was as easy as replacing the amount of white flour from your favorite cookie recipe with almond flour but thats not always the case. Trust me, I’ve botched quite a few recipes in my experimentation! After lots of trial and error I came up with the PERFECT recipe! If you’re looking for a soft, chewy, buttery gluten free option, then these are your jam! I actually prefer them over the traditional chocolate chip recipes. Even my picky husband approves & most people who try them, can’t tell the difference.
Gluten Free Chocolate Chip Cookies
- 2 cup almond flour
- 1/2 cup butter
- 1 cup raw cane sugar
- 1 egg
- 1/2 tsp vanilla
- 1/2 tsp baking soda
- 1 cup chocolate chips
- Preheat oven to 350 degrees and line baking sheets with parchment paper. Melt butter in microwave. Add sugar, vanilla & egg. Mix well before adding almond flour & baking soda. Add your favorite chocolate chips and place on baking sheet. Bake for 7 minutes, do not over bake...cookies will continue to cook on the baking sheet as they cool. If you like a crunchier cookie, bake for an additional 2 minutes.
